Food Friday: Recipe for Jambalaya

If you are looking for a delicious recipe which will feed a large group, look no longer!  Jambalaya is it.  Though I've never made this recipe, I've been delighted to eat it many times at potlucks at my friend Lynn's home, as it is one of her "signature" dishes.  A great recipe from a great cook! I'm happy to pass it on to you!  You won't be disappointed.
Jambalaya
Use a roaster--this makes a large recipe!

Ingredients:
1 ring smoked sausage, chunked
2 cups rice
1 cup celery, chopped
2 onions, chopped
4 to 6 garlic cloves, minced
1 (32 oz) can tomatoes, diced
6 cups chicken broth
2 tsp thyme
1 tsp cayenne pepper
1/2 tsp salt
4 bay leaves
2 cups cooked chicken or shrimp
Parsley
1/2 cup butter

Directions:
In kettle, saute celery, rice, onions, and garlic in butter till starting to soften onions.  Dump in roaster with rest of ingredients.  Stir.  Bake at 350 degrees for 2 hours or until rice is soft.
