Brunch Recipes: Recipe for Ham or Bacon and Broccoli Quiche on Food Friday

These are the recipes that we served to our guests at the Spring Celebration Brunch!

Recipe for Ham and Broccoli Quiche
Serves: 4-6
Ingredients:
3 Tbsp butter
1/2 c. onion, chopped well
salt and pepper to taste
1 tsp thyme leaves
5 strips of bacon (cooked and crumbled)
or
1 c. chopped cooked ham
1-1/2 to 2 c. fresh broccoli
6 eggs (room temperature)
1-1/2 c. sharp cheese
1-1/4 c. cream (heated gently)
1/2 tsp salt
pinch pepper


Directions:
  • Preheat oven to 325 degrees.
  • Heat butter in skillet over medium high heat.  When it melts, add onion, salt and pepper.
  • Cook over medium high heat, stirring frequently, for about 20 minutes, adjusting heat to avoid browning--cook until onion practically melts.
  • Add thyme leaves; stir; turn off heat and cool slightly.
  • Place cooked bacon or ham, chopped, on the bottom of pie crust.
  • Place the pie crust on a cookie sheet.
  • Cook broccoli for 1-2 minutes in salted boiling water.  Drain well.  Set aside.
  • Combine in a large bowl:  eggs, sharp cheese, cream, 1/2 tsp. salt, pinch pepper and cooked broccoli and onions.
  • Pour into pie crust (over the bacon or ham you placed there earlier)
  • Bake for 30-40 minutes
  • Reduce heat if edges brown too fast.
Most of our guests at the Brunch chose Ham and Broccoli Quiche, much to my surprise!  Second favorite was Bacon and Broccoli Quiche. These quiches were delicious!
