Food Friday: Recipe for Refreshing Punch

Need Easter Brunch, Mothers Day or graduation recipes? This is the punch recipe that we made and served at my Moms' Spring Celebration Brunch--it was delicious!  (Refer to this post on Grad Cap Nut Cups for more ideas for your Graduation Open House and to see some fun photos!)


In color, this punch is a yellowish orange, which is nice for a spring or summer gathering.  The base for this refreshing punch will keep in the freezer for a couple of months, ready when you need it, for impromptu special occasions.

Recipe for a Refreshing Punch
Serves: 20 servings
Ingredients:
1 (12 oz) can frozen lemonade concentrate
1 (12 oz) can frozen orange juice concentrate
1 (48 oz) can pineapple juice (not frozen)
1 (2-liter) bottle 7-up

Directions:
  • Mix the lemonade and orange juice concentrates together
  • Add the can of pineapple juice and mix thoroughly
  • Freeze in a shallow pan or tupperware container; covered, if possible (a pie taker or a 9x13" pan work well)
  • Add the 2-liter bottle of 7-up just before serving
You can scrape the frozen mixture with a fork, or, if it's in a round bowl, it can be almost like a flavored ice ring.
