Here are two dishes that you can make for Valentine's Day or whenever you want to make someone feel special!  I've been making these two recipes for 20-30 years and they always meet with rave reviews!

Raspberry Delight
This dish can be made ahead!
Serves: 12-16

Ingredients:
2-1/4 cups all-purpose flour
2 Tbsp sugar
3/4 cup butter, softened
1 (8 oz) package cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
1/4 tsp salt
2 cups whipped topping
1 (6 oz) or 2 (3 oz) packages raspberry gelatin
2 cups boiling water
2 (10 oz) pkg sweetened frozen raspberries
Additional whipped topping (optional)
Fresh mint (optional)

Directions:
  • In a bowl, combine flour and sugar; blend in butter with a wooden spoon until smooth.
  • Press into an ungreased 9x13-inch baking pan.
  • Bake at 300 degrees F for 20-25 minutes or until set (crust will not brown).  Cool.
  • In a mixing bowl, beat cream cheese, confectioners sugar, vanilla, and salt until smooth.
  • Fold in whipped topping.  Spread over crust.

For Topping:
  • Dissolve gelatin in boiling water; stir in raspberries.
  • Chill for 20 minutes or until mixture begins to thicken.
  • Spoon over filling.
  • Refrigerate until set.
  • Cut into squares; garnish with whipped topping and mint if desired.
Party Chicken
Serves: 8-12

Ingredients:
8 boneless skinless chicken breasts
8 slices bacon
1 (4 oz) jar dried beef
1 can cream of mushroom soup (or cream of chicken soup)
1 (8 oz) carton sour cream

Directions:
  • Shred the chipped beef and layer in bottom of a 9x13 baking dish.
  • Wrap each chicken breast with a slice of bacon.
  • Combine soup and sour cream and spread over the top of the chicken.
  • Now, depending on when you want to serve this dish, you have baking options:
Bake at 350 degrees F for 1 hour or
Bake at 300 degrees F for 1-1/2 to 2 hours or
Bake at 250 degrees F for 2-3 hours.


This dish can be assembled ahead of time and refrigerated until ready to bake.
