Food Friday: Recipe for Raspberry Chicken


For Food Friday this week, as promised, I'm sharing a couple of the recipes from the Valentine Meal I made my hubby and son last week.  The menu was:

Raspberry Chicken with Long Grain and Wild Rice
Spinach, Broccoli and Carrot mix
Bread Sticks

Raspberry Chicken
Serves: 4
Ingredients:
4 boneless skinless chicken breast halves
1/4 tsp salt
1/4 tsp pepper
1/2 cup seedless raspberry jam
2 Tbsp balsamic vinegar
1 Tbsp reduced-sodium soy sauce
1/8 tsp crushed red pepper flakes

Directions:
  • Sprinkle chicken with salt and pepper.  In a large nonstick skillet coated with cooking spray, cook chicken over medium heat for 5-7 minutes on each side or until a meat thermometer reads 170 degrees.  (I may try slow cooking it next time to make the chicken even more tender.)
  • Meanwhile, in a small saucepan, combine the remaining ingredients.  Bring to a boil; cook until liquid is reduced to 1/2 cup.  Serve with chicken.  (Make sure to stir often, and keep the heat low, if necessary.  I used a combination of preserves and jam, as that's what I had!)
  • I served this with Uncle Ben's Long Grain and Wild Rice, original recipe, fast-cooking.
This recipe is super simple, but very special, and it took no time at all to make.  It turned out delicious.

So glad to hear that you're feeling better! Did your husband do the "chivalrous" thing and take care of you?

This food looks so delicious! Wendy, you put me to shame - I'm not much of a cook, but your recipes inspire me to try some of them.

I was able to go to church today, but am STILL not 100%--I'll up my Vitamin C, I guess. I don't think of myself as a great cook. My trick is to find those who are, and get their recipes, following their instructions for how to make the food great! Then I make them over and over again! (Also, I rely on very simple recipes.)
When we are sick, our different backgrounds come out! (As a kid, I would get sick just for all the extra love and attention I would get!) My husband was raised in a family where they all like to be left completely alone when they're sick! It's kind of a standing joke, because when we were engaged, his family and we visited my sister-in-law and her family in Canada, and I got quite sick, and they all went in the other room and left me completely alone, lying on the sofa in the dark living room, because that's what THEY would have wanted done. They laughed and talked, and I felt terrible!! I DO NOT like to be left alone when I'm sick! I thought they didn't like me! We've had quite a laugh over that in subsequent years:) So, my family doesn't really take care of "me," but my daughter cooks chicken soup, and they all keep the household running (cooking, cleaning, etc.), and I am SO grateful for that! (She and my husband have a lot of server in them.) We're all different.
Grateful for my family!

OK, Wendy - I just had to come back and comment on this one! I also HATE being left alone when I'm sick. I feel all little and helpless and vulnerable - I want to be babied and paid LOTS of attention to. My husband - leave him alone! Like a bear in his cave...

We're all so different, aren't we? God must get a kick out of us sometimes!!

How funny, Sharon! Isn't that just the way? We have friends where the husband loves to have TONS of attention, and she is a very busy lady when he's sick, so I don't mind if mine likes to be left alone:) I guess. We ARE all different, and it's good to know that that's OK! (This would be a fun subject to poll!)
Next time you're sick, let me know, and I'll send you some "love and attention" (and maybe some "chicken soup for the soul" so to speak)!
